🧅 Slow Cooker Beef Brisket

Rich flavor. No stress. And yes, you can absolutely pour the gravy on everything.

This one’s for those “I want a real dinner but don’t want to think about it” kind of days. You sear the brisket for big flavor, then let your slow cooker do the heavy lifting. The onions melt into the broth, the garlic gets cozy with the French onion seasoning, and by the end of the day—you’ve got a pot of fork-tender beef with bold, cozy flavor.

🎯 Minimal effort, max flavor. Bonus points if you throw in potatoes toward the end to soak up all that goodness.

🛒 Ingredients:

  • 1.5 tbsp olive oil, divided

  • 2 lbs beef brisket or roast

  • 1 tsp salt

  • ½ tsp black pepper

  • 1 large yellow onion, sliced or diced

  • 2 tbsp (or more) Pampered Chef French Onion seasoning or whatever brand you like

  • 3 cloves garlic, chopped

  • 1 cup low-sodium chicken stock or beef broth

  • 1.5 tbsp Worcestershire sauce

🧑‍🍳 Instructions (Option 1 – stovetop start):

  1. Season brisket with salt and pepper. Sear in a skillet with ½ tbsp oil, 4–5 minutes per side. Transfer to slow cooker.

  2. In the same skillet, sauté onions in remaining oil until softened. Stir in seasoning and garlic.

  3. Add onion mixture to the slow cooker. Pour in broth and Worcestershire.

  4. Cook on low 7–8 hours until tender. Shred, discard fat, and return beef to juices.

🔁 Option 2 – if your slow cooker has a sauté setting:

  1. Sear brisket 4–5 minutes per side with ½ tbsp oil, then remove.

  2. Add onions, garlic, and seasoning to cooker while it's hot.

  3. Stir in broth and Worcestershire, then add brisket back in.

  4. Cover and cook on low for 7–8 hours. Shred, discard fat, return to juices.

🍽️ Optional Add-Ons:

  • 🥔 Add halved baby potatoes during the last 2 hours for a full one-pot meal.

  • 🍞 Make a quick gravy using the leftover juices: simmer in a pan with cornstarch and the juices (I love to add some sour cream at the end or some French onion dip).

  • 🥖 Serve over mashed potatoes, with beer bread, or piled high on rolls.
