No Bake Cookies

These cookies are quick, nostalgic, and always hit the spot — no oven needed! Rich cocoa, creamy peanut butter, and chewy oats come together in one pot for the perfect anytime treat.
I always laugh thinking back to the time my stepmom made a batch without boiling the mixture. She thought “no-bake” meant no cooking. When my dad and I said they were “a little grainy, but not bad,” we found out the sugar hadn’t melted — and the cookies never set. We all had a good laugh, and now I think of that batch every time I make them.
🧑🍳 Ingredients:
2 cups sugar
½ cup milk
1 stick (½ cup) butter
¼ cup cocoa powder
1 cup peanut butter
2.5 - 3 cups quick oats
1 tsp vanilla extract
Pinch of salt (optional)
👩🍳 Instructions:
Line a tray with parchment or wax paper.
In a saucepan, combine sugar, milk, butter, and cocoa. Stir over medium heat until melted and smooth.
Bring to a full boil and let it boil for 1 minute.
Remove from heat. Stir in peanut butter, vanilla, and salt until smooth.
Add oats and stir well.
Drop spoonfuls onto the prepared tray and let cool until set.
🔄 No-Bake Cookie Variations
Double Chocolate – Add ½ cup mini chocolate chips after stirring in the oats.
Salted Caramel Swirl – Drizzle with caramel sauce and sprinkle with flaky sea salt before they set.
Mexican Chocolate – Add ½ teaspoon cinnamon and a tiny pinch of cayenne pepper with the cocoa.
Mocha – Add 1 tablespoon instant espresso powder with the cocoa for a rich coffee flavor.
Nutty Crunch / Flavor Boost – Use crunchy peanut butter or flavored nut butters (like maple, cinnamon, twix, christmas tree cake, or honey-roasted).
