Lightened-Up Alfredo Sauce

Creamy, garlicky, and comforting — without the heavy cream or butter. This version is smooth, flavorful, and reheats like a dream (no breaking or clumping). It’s everything you love about Alfredo, minus the post-dinner regret.

🧄 Ingredients

  • 3 wedges Laughing Cow Light cheese

  • 30g shredded Parmesan cheese (about ⅓ cup)

  • 200g cottage cheese (about ¾ cup – blend until smooth if not using a cooking blender)

  • 1–2 cloves garlic, minced (adjust to taste)

  • ~2 oz milk (start small and adjust for desired consistency)

📃 Directions

  1. Add everything to your blender.→ If using a cooking blender, run the sauce setting.→ If using a regular blender, blend until smooth, then gently warm on the stovetop.

  2. Pour over your favorite pasta, roasted veggies, or protein.

  3. Try not to eat it straight from the blender. (No judgment if you do.)

🥩 Protein Pairing Suggestions

This Alfredo plays well with just about anything — especially if you’re a garlic lover:

  • Frozen Chicken: Breaded or not, Real Good breaded chicken works great.

  • Rotisserie Chicken: Perfect for busy nights — just shred and reheat.

  • Smoked Chicken or Pork: Adds depth without needing extra seasoning.

  • Pan-Seared or Air-Fried Chicken Breasts or Thighs: Slice thin and serve over roasted potatoes, pasta, on pizza, or steamed veggies.

🥦 Optional Add-Ins

Want to sneak in some green or change up the flavor? Try:

  • Lightly sautéed spinach

  • Roasted broccoli

  • Add some cherry tomatoes (I like to cook them until they burst, if I'm in a hurry, I cook and smash)

  • Add some sun dried tomato or pesto/pesto seasoning

  • Or just keep it classic and garlicky. You’re the boss here.
