This is a small batch recipe—perfect for a quick flatbread, a few rolls, or a base to build on. You can easily double or triple it depending on what you need. No rise time, minimal ingredients, and it works with whatever tools you’ve got.

Use it for skillet flatbreads, stuffed pockets, or shape and bake as soft rolls.

✅ Option 1: Using Self-Rising Flour

Ingredients:

– 1 cup (120g) self-rising flour

– ¾ cup (180g) plain Greek yogurt (like Oikos Pro)

✅ Option 2: Make-Your-Own Self-Rising Flour

Ingredients:

– 1 cup (120g) 00 flour or all-purpose flour

– 1½ tsp (6g) baking powder

– ¼ tsp salt (optional but recommended)

– ¾ cup (180g) plain Greek yogurt

🧈 Optional Add-In: Melted Butter

For added flavor and richness, mix in:

– 1 tbsp (14g) melted butter➡️ If using butter, reduce Greek yogurt slightly to 170g (about ¾ cup minus 2 tsp)

🛠️ Dough Adjustments Before Cooking or Baking

If the dough feels too dry or crumbly:

– Add 1 tsp Greek yogurt at a time and mix until soft and smooth.

If the dough feels too wet or sticky:

– Add 1 tsp flour at a time until it’s soft but not sticking to everything.

You’re aiming for:✔ A soft, kneadable dough✔ Slight tackiness is fine❌ Avoid dry or gooey dough

🍳 To Cook as Flatbread (Stovetop)

  1. Divide dough into 2–4 pieces.

  2. Flatten to about ¼" thick.

  3. Cook in a dry or lightly greased skillet over medium heat.

  4. Cook 2–3 minutes per side until golden and lightly puffed.

🔄 To Make Rolls or Bake as Bread

For Rolls (oven method):

  1. Preheat oven to 375°F (190°C).

  2. Divide dough into 4 equal pieces. Shape into rounds.

  3. Place on a parchment-lined baking sheet.

  4. Brush with melted butter or olive oil if desired.

  5. Bake for 18–22 minutes, until lightly golden and cooked through.

Optional: Top with garlic butter, seasoning, egg wash, or shredded cheese before baking.

🧀 Cheese-Stuffed Option

  1. Flatten a dough ball.

  2. Add 1–2 tsp cheese to the center.

  3. Fold edges over and seal. Gently flatten or shape again.

  4. Bake or cook as noted above.
